Make a pumpkin pie!
You can make your own pastry or if you’re like me and you’re all about the easy life then you can buy a pre-made pie base.
You will need:
1 cup of light brown sugar
1 tablespoon of all-purpose flour
½ a teaspoon of salt
1 tsp of ground cinnamon
1 tsp of ground ginger
½ a tsp of ground nutmeg
1/8 of a teaspoon of ground cloves
3 large eggs (lightly beaten)
1 15 ounce pumpkin puree
1 and ¼ cups of evaporated milk
Combine dry ingredients and in a separate bowl combine the wet ingredients then combine the dry and wet ingredients and mix until combined. Pour the filling into the pie crust and bake at 400 for 45 mins. The filling should be slightly wobbly when taken out and then left to cool. Refrigerate overnight once cooled and serve.

Light night 2018 4th -5th of October
Light night has to be one of the best exhibitions of this month, over this two day period there will be a series of events where beautiful light displays and art can be seen. Click here to see what events are near you. Some of these events are outdoors so be sure to wrap up warm and bring a flask.
