Easy Recipes for the Macmillan Coffee Morning
The Macmillan coffee morning is nearly here! 28th of September to be exact!
Our branches are getting involved too! These are the times they will be serving tea, coffee and cakes.

These recipes are quick and easy so come along and join in.
Carrot Cake in 45 mins:
You will need…
• 4 eggs
• 2 cups of flour
• 1 ¾ cups sugar
• 2 teaspoons baking powder
• 1 teaspoon Cinnamon
• ½ teaspoon baking soda
• 3 cups of grated carrot
• ¾ cup of oil
Grease and flour two 9 inch round pans and then combine all the wet ingredients in a large mixing bowl. Stir well until this is all combined then add the dry ingredients. Add grated carrots to the mixture last and divide batter between the two baking pans.
Bake at 350 degrees for 30 minutes.
For the cream cheese
• 2 packets of soft cream cheese
• ½ cup soft butter
• 1.5 cups powdered sugar
• 2 teaspoons of vanilla extract.
Nutella Cheesecake in 15 mins:
• 280g digestive biscuits
• 120g butter unsalted
• 600ml double cream, whipped into peaks
• 400g Philidelphia cream cheese
• 75g icing sugar
• Juice of half a lemon
• 600g of Nutella
• Chopped hazelnuts for topping
Crush the biscuits in a freezer bag until they are fine, mix with the melted butter and press into the bottom of your baking tin. Combine whipped cream, icing sugar, cream cheese and lemon juice. Fold until fully combined. Add the Nutella and stir thoroughly, smooth the mixture over the base and refrigerate overnight. Top with hazelnuts.
Or for extremely low maintenance!
Marshmallow Cupcakes in 30 mins:
You will need…
1 box Betty Crocker chocolate cake mix
1 tub of chocolate frosting
Mix the cake batter together and fill cake cases with the mixture, put a marshmallow in the centre leaving space for the cakes to rise. After they are cooked they will have a well in the middle, put a fresh marshmallow on top of the baked cakes. Wait for the cakes to cool and use cake frosting to cover the marshmallow in the centre. Super-fast tasty cakes!
