Easy Peasy one cup pancakes for no-fuss Pancake Day
All you need for measuring this recipe is a mug or cup,
You will need:
· 1 large free range egg
· 1 cup self-rising flour
· 1 cup of milk
· A pinch of sea salt
· Olive oil
· 4 tablespoons of natural yoghurt
Combine the flour, egg, milk and salt into a large mixing bowl and whisk together until the batter is smooth.
Fold in the blueberries if you are using them and heat a large frying pan over medium heat with ½ a tablespoon of olive oil.
Tilt the oil to spread it around the pan evenly, spoon the mixture into the pan large spoonfuls at a time. The pancake will spread out and cook, once the top of the pancake is bubbling flip it over and cook until golden brown on the outside. Repeat the process until all the batter is cooked.
Serve the pancakes straight away with the natural yoghurt or maple syrup.
*Instead of blueberries you could use banana or cocoa powder.
